Country Garden Chicken Recipe




Hi everyone.
It's a Monday for sure.  I needed a quick and easy recipe and this one just hit the spot.  It's so easy to make your gonna love it.  

First you take (4) Chicken Breast  with bread crumbs and fry them up then place on platter.  Once they are done you take 1/4 c. of diced Tomatoes, Green Peppers and Onions and throw them in the pan and sauté them until the onions are translucent.  You then put in a packet of .7 Country Gravy Mix and a cup or so of water slowly.  Once done you just pour over the chicken.  Then you just add a veggie of your choice.  All done!  Simple as pie and you can also find this recipe available at Publix.  Hope you like it.

Campfire Orange Cake

Fall is here and time to put away the salad for more hearty foods.  It also the best weather for camping.  So we close the summer and start the fall with orange camp cakes.  This is a very simple recipe but a lot of fun to make.

This recipe is a great desert for camping weekends.
 
What you will need:
Oranges
Jiffy Cake Mix
Egg
Powdered sugar
Water
Aluminum foil


Cut the top off the orange and pull out all of the orange leaving an empty shell. 

Mix the cake batter, eggs and water.  Pour cake mix into orange shells.  Place the orange tops on the cake filled orange and wrap in foil.    Place in oven and cook at 400 degrees checking every 20 minutes until done. 



You can use a glaze or not.  If you do, just use powdered sugar, water and a little butter mixed together and cover the cake sparingly.  You can also use different flavors of cake.  Keep in mind that the orange shell will flavor the cake to a certain degree.  If your camping, these are easily placed in a camp fire to cook slowly.

Gluten-Free Grilled Stone Fruit Trifle

I've been dying to try this recipe before the fall and last night I did.  It was a huge hit with everyone and I will definately be using it again. It really is delicious!





2 TB honey
3 lbs mixed stone fruit, halved and pitted.  
1 (12-oz) gluten free angel food cake
2 TB fresh thyme leaves, chopped
2 Cups (16 oz) organic lowfat vanilla yogurt

Prepare a grill for medium- heat cooking. In a bowl, whisk together honey with 1 tablespoon very hot water.  Brush cut side of fruit with honey mixture and grill 8 to 10 minutes or until tender and lightly chared.  Turn over half way through grilling and brushing again with honey mixture.  Grill cake slices 2 to 3 minutes or until lightly chared on both sides.  Coarsely chop grilled fruit.  Toss fruite with thyme and any remaining honey mixture until evenly combined.  Cut grilled cake into bite size pieces (I chose to do a whole slice plate and a chopped dish).  Layer half of the cake pieces in a glass or dish.  Top with half fruit and half yogurt.  Repeat with remaining ingredients.  Keep refrigerated and serve within 1 day.

Egg Peppers

I tried a new recipe to break up the same old breakfast day in and out.  This dish is super fun to make.

Ingredients 
1 large Green Bell Pepper
1 large Red Bell Pepper
Eggs
Black Pepper
Anything else you would like to add. Be Creative!

You slice the peppers so that when you break the egg it holds it all in.  Then you just sprinkle with pepper or other seasoning and bake for about 20 minutes or until desires results. Yummy and you can make ahead of time and heat them up.

Happy Weekend Refreshment Time!

     My apologies for the past few days of no activity as I have been down with a touch of the flu.  Back to my normal self and headed down to see my mom and bro this Saturday morning.  I am so thankful to my brother who is a genius with most anything he touches especially computers.

Yummy Foodies...

     Work until four o'clock, gym until five thirty, home by six.  Oh look, sitting on my porch is the headboard I recently purchased for my bedroom makeover.  That will just have to wait another day as I am famished and too tired to cook.  I needed something not requiring much standup time at the oven so picked up some fresh bread from the grocery store that sells from a local bakery here in town.  My husband recently read to me an article about how commercial breads are packed with sugar and suddenly now sugar is the enemy.  This is my version of bruschetta with an organic flair with watermelon as a side.  It's quick, easy and packed with flavor.

Ingredients
Fresh baked garlic/herb bread
Fresh mozzarella
Ripe tomatoes
Pesto
